Tsubaya Knives

Tsubaya has been in business in Kappa-bashi for 65 years. They were once ironmongery, but the second-generation proprietor - Hiroshi Saito, changed their direction to become a knife specialized store in 1980. He proudly says, "Passing traditional knives down the generations is really important, but demands on knives vary from one chef to another, so we listen. That's why many of our knives in stores are our originals.
